As I am in to my food, I looked at better ways to cook chicken & rice for pre contest. As this diet is very strict you are limited with the type of seasoning you can use. Anything with sugar is a huge "NO NO" & in the event you look at the ingredients on most seasonings you will notice sugar & salt. All sauces are out of the query as these have a massive calorie content, most again are loaded with sugar & salt.

The calories I got had to come chiefly from chicken & rice.

So these "Chicken & rice cakes" are something that I managed to invent when I was struggling weekend when I had some time.

The measurements of chicken & rice will vary for each person in the event you are competing. In the event you are using this as a healthy option you can follow the measurements that I used.

four chicken breasts

You will need-

Ground Black pepper

300g of wholegrain rice (raw)

one chili

one clove of garlic

A bunch of fresh coriander

No sugar/ salt seasoning. (I used Singapore seasoning made by "Penzeys spices") but any other seasoning that meets the criteria of your diet Will do)

Olive oil or "1 cal none stick spray"

Step one

Cook the rice so it is prepared to eat, leave this to icy slightly but don't permit it to go chilled

Step two

Wash & cut the chicken breast in to chunks. They are not looking for anything here, chop it up & spray with the one cal none stick spray a few times.

Step three

Crush or finely chop the garlic (In the event you have seen lovely fellas, you can use a razor blade) & cut the chili up. Make definite you remove the seeds from the chili here in the event you don't require it to be hot.

Pull apart or chop the coriander finely & mix with the garlic, chili & coriander.

Step 6

Season the chopped chicken with the Singapore seasoning or what ever you chose to make use of. (the Singapore seasoning will give the food a pleasant spicy Asian taste). Then mix in the chili, garlic, pepper & coriander. It is best to coat all of the chicken with this seasoning, so get stuck in to it along with your hands.
Step 7
 Put the raw chicken covered in seasoning in to a food processor & also add the rice. Blend this in short bursts, you don't require to make a raw chicken & rice soup! It is personal preference on how fine you require to go here but I am liking to keep it work.

Step 8

One time this is mixed or "Blended" take this out of the blender & put in to a bowl. Make the mixture in to a ball. Half the ball & half this again, you ought to finish up with four balls... Lovely! Squash these balls down so they are about an inch thick

Step 9

Use the one cal spray to lightly grease a baking tray or some tin foil, then place the four cakes onto the tray & again spray with one cal spray (This will give the cakes a crispy finish) or in the event you are not on a pre- contest diet, you could top with Parmesan cheese. (I haven't tried this but I imagine that it would finish off the cakes nicely)

Put in a preheated oven at 180 Celsius or gas mark four for around 30 mins or until they have began to brown. Make definite that these are cooked thoroughly before eating.

Step ten

Serve along with your favourite veg & eat while hot in the event you can. I have also eaten these chilled as I will normally make a massive batch. It is best not to reheat these as reheated chicken may cause you issues if it is not completed right.
